After spending my early childhood in Chattanooga, my dad’s job took our family to Waco, Texas. Yes, the home of Chip & Jo, Baylor University, Dr. Pepper, beautiful Texas Bluebonnets, and so much more. It wasn't quite that glamorous in the 80's but has thrived into an amazing town and tourist destination over the years. In fact, Chip & Jo featured my childhood home in season 4 with the prickly pear house and Justin worked at the historic ELITE CAFE, which is now the Magnolia Cafe. The Elite is where Justin first learned at a young age the art of fajitas and the demand for a ‘to go’ family option. After I graduated from The University of Texas, (the other UT) we both spent most of our careers in Austin & Houston experiencing all forms of Tex-Mex. Growing up in Central Texas otherwise known as “The Heart of Tx” is what inspired the name of our business endeavor.
After moving to Tennessee 5.5 years ago, we instantly fell in love with the area but were missing the taste of Tex Mex. Justin has 15 years of Executive Chef experience owning a bakery, deli, fajita delivery restaurant and I have 25 years in the hospitality/food & beverage industry. Based on our experience, it was only natural for us to jump back into the food business and make Justin’s food truck dream a reality.
We love our TN home, raising our TX girl in a TN world, our insurance customers, the local community, and our friends in the Brentwood/Nolensville area. We are so grateful for the opportunity to share a little bit of our central Texas history and food with you!
